Chicken Alla Vodka

Pasta Alla Vodka w/ Roasted Chicken Breast & Pecorino Romano (Serves 6)

6 Small Chicken Breast, chopped into bite size pieces

2 Tbl. The Fat Pastor Tuscan Seasoning (or Italian seasoning with salt & pepper)

3 Tbl. Olive oil

1 1/2 White onion, diced 

6 Cloves garlic, diced 

4 1/2 Tbl. Butter 

1 1/2 Cups vodka 

1 1/2 - 24.5 oz Bottles of Mutti tomato sauce (because it's the best) 

2 1/4 Tsp. Oregano 

8 large leaves basil, torn + More for garnish

6 Tbl. grated Parmesan 

2 cups heavy cream

Salt and pepper to taste 

1 1/2 Lbs. Good Penne Pasta 

Add the olive oil to the pot, and heat over medium high. Sear the chicken breast on every side, remove and set aside.

Add the butter and the onions and garlic, and sauté until translucent.

Add the vodka and allow to reduce by half.

Add in the tomato sauce and herbs and parmesan. Bring to a strong simmer, and add in the chicken with any drippings. Let simmer for 30 minutes, watching to not let it burn.

Add in the heavy cream and check for seasoning. Cook the pasta al dente, and then add to the sauce. 

When plating, add in a healthy dose of more parmesan, and a couple fresh basil leaves!
