Chicken Salad Sandwich

Leftover chicken??? Let's go!!
I cooked some chicken sous vide for another meal, and today I was craving a really good sandwich! Thus my Italian chicken salad sandwich became a thing.
What makes an amazing chicken salad sandwich? Well, I personally love the addition of the fruit. To me, that's where the magic happens. I used apples here, but I also love grapes. Or both! Then it was all about the golden raisins, the pistachios, and celery two ways - diced fine, but also some celery salt to ramp up the flavor. I think celery is a VERY under-appreciated flavor, and I love it all - the stalks, the leaves, the root, the seeds! It's all good! Everything comes together under the watchful eye of a quality mayonnaise.
Tuscan Chicken Salad Sandwich (Serves 6)
2 chicken breasts, diced
1 Tbl. The Fat Pastor's Tuscan Seasoning (or an Italian seasoning with salt & pepper)
5 stalks of celery, diced
2 apples, diced 1/2 cup crushed pistachios
1/2 cup raisins
1 1/2 cups Duke's mayo
2 Tsp. of celery salt
Sourdough Bread
Combine everything together except for the bread, and check for seasoning. Toast the slices of sourdough, and pile in the chicken salad! Enjoy!
